Eton Mess
Our first cookery corner recipe is donated to us by local chef Anthony Gaskell from Altrincham.
For four persons
Ingredients:
400ml Double cream
8 table spoons Icing sugar
4 drop vanilla essence
8 meringue nests
16 strawberries – chopped
Strawberry Coulis
4 wine glasses
Method
-Whisk the cream, icing sugar and vanilla essence until stiff
-Crush the meringue into a bowl and add the chopped strawberries
-Fold the cream carefully into the meringue and strawberries
-Half fill each wine glass with the mix
-Add a teaspoon of coulis to each wine glass
-Top each wine glass up with the rest of the mix.
-Decorate with either a strawberry or mint leaf and dust with icing sugar
